Potato Rosti with Prosciutto di San Daniele

Ingredients
  

  • 400 g of potatoes
  • starch to taste
  • extra virgin olive oil to taste
  • rosemary to taste
  • salt and pepper to taste
  • 100 g of Prosciutto di San Daniele

Instructions
 

  • Blanch the potatoes in their skins in boiling salted water for 10 minutes.
  • Peel and grate them.
  • Season with salt, pepper and rosemary.
  • Shape into discs and sprinkle with starch.
  • Cook them 5 min per side on a medium heat.
  • Serve them with a few slices of Prosciutto di San Daniele
